About this place
Shibaura loin is a serving of lean beef topped with grated daikon and ponzu. Diners are advised to sear it thoroughly on one side, making the cooking method part of the experience. One diner who tried the loin found it meltingly tender despite being relatively low in fat. Rather than choosing only richer cuts, you can vary the meal with lean beef and tongue as well.
For a selection of cuts in one sitting, the Shibaura Course features 13 grilled items, including tongue, premium cuts, lean beef and offal. It consists of grilled dishes only, so salads and rice dishes must be ordered separately. À la carte, Japanese Wagyu thick-cut premium tongue is available from 1 pieces, while the seared toro beef is offered from 1 slices. These options make it easy to try a little of several cuts or share different plates around the table.
Drinks include Carnivor Zinfandel, described as a red wine to pair with meat, and highballs with a crisp finish. Choose a drink to go with your selection of cuts.
